Just make something to shoot with (the level "Libidious.jp", inspired by Gradius, is a fine example), then build a supermutant. I'm sure some sort of blood/goo looking stuff can be created somehow. Maybe. And yeah, maybe it won't look so cool. But you can make it! By the way, Gamasutra has been a regular look-see for me these days. I was wrong? It's one of the more deep and intricate gaming sites out there. No time for wit:

LittleBigPlanet WILL let you blow heads off supermutants. Just make something to shoot with (the level “Libidious.jp”, inspired by Gradius, is a fine example), then build a supermutant.
